Here’s a recipe for a non-alcoholic fruitcake using orange juice:

Ingredients:

  • 2 cups mixed dried fruit (raisins, currants, chopped dates, etc.)
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1/2 cup orange juice
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions:

  1. Preheat the oven to 325°F (165°C). Grease and flour a 9-inch cake pan.
  2. In a large mixing bowl, combine the mixed dried fruit, flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate mixing bowl, cream together the brown sugar and softened butter until light and fluffy. Add the eggs one at a time, beating well after each addition.
  4. Gradually stir in the dry ingredients mixture until well combined. Then, pour in the orange juice and stir until the batter is smooth.
  5. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  6. Bake the cake for about 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before removing it and transferring it to a wire rack to cool completely.

As for the orange juice, it’s best to use freshly squeezed orange juice for the best flavor. To make fresh orange juice, simply peel and juice fresh oranges using a juicer or by hand. If you need to use store-bought orange juice, make sure it’s 100% pure orange juice without added sugar or additives.
