POWER BAR

Recipe for a chocolate-based power bar.

Ingredients:

  • 1 cup pitted dates
  • 1/2 cup almonds
  • 1/2 cup cashews
  • 1/2 cup rolled oats
  • 1/4 cup chia seeds
  • 1/4 cup unsweetened cocoa powder
  • Pinch of salt
  • 1/4 cup honey
  • 1/4 cup almond butter
  • 1/2 tsp. vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a 8×8 inch baking dish with parchment paper.
  2. In a food processor, pulse the dates, almonds, cashews, rolled oats, chia seeds, cocoa powder, and salt until everything is finely chopped and well combined.
  3. In a separate bowl, whisk together the honey, almond butter, and vanilla extract until smooth.
  4. Add the honey mixture to the food processor and pulse until the mixture is evenly moistened and starting to clump together.
  5. Transfer the mixture to the prepared baking dish and press down firmly to create an even layer.
  6. Bake the power bars for 15-20 minutes, or until the edges are lightly browned and the bars are firm to the touch.
  7. Let the bars cool completely in the baking dish, then remove them from the dish and cut them into bars or squares.
  8. Store the bars in an airtight container at room temperature for up to a week, or in the refrigerator for up to two weeks.
